Jazz Apples & Date Cake

Without the sauce, this pan cake is a moist, flavourful treat for an anytime pick me up. Pack it in lunches or enjoy it with a hot coffee. With the extra sauce, it is transformed into an indulgent dessert worth sharing.
2 ¼ cups chopped, pitted dates
½ cup, chopped Jazz apple (skin left on)
2 ¾ cup water
2 ¼ tsp baking soda
1 tsp almond flavour
1/3 cup butter, room temperature
1 ½ cups brown sugar
5 eggs
½ cup Jazz apples, grated (skin on)
2 ½ cups all purpose flour
1 ½ tbsp baking powder
1 tbsp cinnamon

CAKE

  • 2 1/4 cup chopped, pitted dates
  • 1/2 cup chopped Jazz apple (skin left on)
  • 2 3/4 cup water
  • 2 1/4 tsp baking soda
  • 1 tsp almond flavour
  • 1/3 cup butter, room temperature
  • 1 1/2 cups brown sugar
  • 5 eggs
  • 1/2 cup Jazz apples, grated (skin on)
  • 2 1/2 cup all purpose flour
  • 1 1/2 tbsp baking powder
  • 1 tbsp cinnamon

SAUCE

  • 1 cup chopped Jazz apples, skin left on
  • 2 tbsp water
  • 3/4 cup sliced almonds, toasted
  • 1 1/2 cup brown sugar
  • 3/4 cup salted butter
  • 1 cup whipping cream (35%)
  • 1 tsp almond flavour

OPTIONAL APPLE CHIPS TO GARNISH

  • 1 Jazz apple, sliced paper thin

Instructions
 

CAKE

  • Prepare 9x13 pan by lining with parchment paper. You will also need a baking tray to create a water bath during baking. Set aside.
  • Add dates, chopped Jazz apples and water in a saucepan and simmer over medium heat for approx. 15-20 minutes until the fruit is soft and has become a thick sauce. If the mixture is boiling too hard, turn heat down. Stir occasionally to prevent it from sticking to the bottom. Remove from heat and stir in baking soda and almond flavour. Set aside to cool.
  • In a mixing bowl, cream the butter and sugar together. Add eggs one at a time and then fold in the grated apple. Stir in cooled date/apple mixture. Mix in flour, baking powder and cinnamon until just combined.
  • Pour into prepared 9x13 pan. Place in a water bath and bake at 350°F for 80-90 minutes. A toothpick will come out clean when the cake is done.

SAUCE

  • Cook chopped apple with water in small saucepan until apples are soft but still have their shape. This can be done in advance and stored in the fridge if you prefer. Toast almonds in a dry frying pan until golden. Set aside.
  • Put brown sugar, butter and cream into a saucepan and bring to a boil. Then reduce heat to simmer and stir continually until smooth and thick, approx. 5-7 minutes.
  • To serve with the sauce, the cake can be warm or cold. It is delicious both ways! Stir apples into caramel sauce and pour over each piece. Sprinkle with toasted almonds.
  • If you have any cake left over, it is also delicious by itself without any sauce and will store well for up to 3 days at room temperature in an airtight container.

OPTIONAL APPLE CHIPS TO GARNISH

  • Slice Jazz apples into very thin slices and place on lined baking sheet in one layer. Bake for 2 hours at 200°F for about 2 to 21/2 hours until the chips are dry. When baking turn apples after one hour of baking time.
